Hinotori from Aramasa Sake Brewery is a distinctive kijoshu inspired by a method developed in 1973 using the oldest sake breweing techniques. Kijoshu unlike normal Sake, part of the water is replaced with Sake and allowing it to ferment once more, resulting in a richer and sweeter style drink.
The name 'Hinotori' or 'sun-bird' represents the sense of rebirth reflecting this transformative process, on top, Hinotori is matured for a year in Japanese Mizunara Oak vats, resulting in a gentle vanilla note that further enchance the sweetness.
