Junmai Daiginjo 'Ryugetsu' 龍月
This limited edition sake is made with 100% Yamada nishiki rice from the Special A districts of Hyogo prefecture, polished down to 35%. It is pressed using the traditional Shichitare Nijukkan with only 7 portion of liquid are obtained from 20 portion of rice collecting the purest drops of sake.
The pressing is done using the Agefune method, where sake is placed in bags and left to drip naturally into containers under its own weight. Historically, these containers resemble wooden boats, which is why the method is called Agefune, meaning 'raised boat.'
Finally, the sake is aged via sub-zero temperature method, resulting in an exceptionally refined and elegant flavour.
Daiginjo 'Soukou' 双虹
A Shizuku styled sake, where the purest drops naturally drip from sake bags without any applied pressure, unlike the Agefune method. These drops are collected and matured under sub-zero temperature method, producing a clear and refined Daiginjo.
It offers a fresh and vibrant aroma of fruits, complemented by a delicate, rice flour like fragrant. On the palate, gentle sweetness unfolds smoothly, finishing with a refreshing and easy to drink character.
