Tasting Note
Nirugame is a junmai sake brewed with low-polished rice at around 90%, in an effort to revive the essence of Edo-period sake for a modern palate.
Crafting sake from minimally polished rice is exceptionally challenging as impurities in the rice can easily dominate the flavours. Aramasa applies the full expertise in ginjo style brewering, creating a sake with both depth and elegance. From 2019 onwards, Nirugame have been fermented in traditional wooden vats further embodying its traditional characters.
