Marumoto Sake Brewery, Okayama

Hou-hou-shu is a sparkling sake from Marumoto sake brewery, produced using a method of secondary fermentation within the bottle that is similar to that of champagne. Brewed using only rice, koji, and yeast, the natural sweetness of the rice is accentuated, with a fine bead of refreshing bubbles from the secondary fermentation, and no added sugar or carbonation. A must try on a hot summer day and ideal for any celebration.
