Brewery History
Odakaya Honten’s history is deeply intertwined with the social upheavals for the Meiji Restoration. The brewery’s first generation founder was inspired during a time of great societal change, witnessing both the sorrow and joy of ordinary people. This spark a desire and ambition to create sake that would contribute to the happiness and well-being of others, which is what Odakaya have dedicated to for the many generations that followed. The second generation of the family further advanced the brewery’s legacy by delving into the scientific aspects of sake brewing, researching into causes of spoilages like fire mold as well as making significant contributions to understand yeast, including isolating strains.
The brand name Kikuyasaka (菊弥栄), chosen to reflect the pride of the Japanese people and hope for a peaceful and prosperous future, symbolizes the brewery’s mission. The sake continues to be crafted with the inspiration of being a timeless drink that will be cherished by generations.

Shimane Prefecture plays a crucial role in shaping the distinct character of their sake and shochu. The region is renowned for its pure and high quality water sourced from the mountainous terrain, essential for the brewing process.
