Brewery History
Ryujin Sake Brewery, established in 1868, has a long-standing tradition of sake-making in Gunma Prefecture, Japan. The brewery has been dedicated to producing high-quality sake for over 150 years. Originally, Ryujin focused on crafting traditional Junmai sake, in 1804, the brewery was reimagined by the 17th generation head, emphasizing handcrafted quality and exceptional flavor. Under the guidance of the current 18th generation president, Ryujin has transformed from producing mass-market sake to a mini brewery focused on small-batch, artisanal production.
Ryujin utilizes snowmelt from the Oze area, which is rich in minerals and soft water characteristics, crucial for their brewing process. This unique water quality is particularly favorable for producing ginjo and daiginjo sake, requiring a meticulous and prolonged fermentation process. The brewery's dedication to low-temperature brewing allows the sake to develop rich flavors and aromas, resulting in a refined product that reflects the essence of the region.
Regionality
Gunma Prefecture, located in the central part of Honshu, is characterized by its diverse geography, with the southeastern region belonging to the Kanto Plain and the northwestern part consisting of mountainous terrain.
The climate in Gunma is marked by a pattern of heavy rainfall in summer and less precipitation in winter. The brewery specifically uses snowmelt from the Oze area for brewing, taking advantage of the soft water's qualities. This water is essential for crafting their exquisite sake.
