Brewery History
Yanagawa Sake Brewery was founded in 1890 by Tadayoshi Meno in Yanagawa, a scenic area facing the Ariake Sea in southern Fukuoka Prefecture. The brewery began its sake-making journey with the intention of creating a premium product that embodies the spirit of the region. Its flagship sake, "Kuni no Kotobuki," is named with the hope for peace, prosperity, and celebration for the Japanese people.
Over its 120+ years of history, Yanagawa Sake Brewery has adhered to the motto of "pursuing quality over quantity," focusing on traditional, handcrafted sake-making methods. The process involves carefully selecting high-quality rice, including the renowned Yamadanishiki, and employing time-honored techniques for polishing, washing, steaming, and fermenting the rice. The importance of koji-making, essential for extracting the unique flavors of sake, is emphasised at the brewery, with a dedicated koji room maintained under optimal conditions.
Regionality
Located in Yanagawa City, the brewery enjoys the benefits of the fertile Chikushi Plain, a major rice-producing region in Japan. This area is known for its pure water and rich agricultural resources, crucial for crafting exceptional sake. The brewery's commitment to using local ingredients ensures that each bottle of "Kuni no Kotobuki" reflects the unique terroir of Fukuoka.
